Pumpkin spice is a seasonal favorite. But our recipe for Pumpkin Spice Bars will let you enjoy the flavor year-round. Plus, with canned pumpkin, carrots and heart-healthy nuts, you'll get all the good flavor and none of the guilt.
What You'll Need:
• 1-1/4 cup all-purpose flour
• 1 teaspoon baking powder
• 1/4 teaspoon baking soda
• 1/2 teaspoon ground allspice
• 1/4 teaspoon salt
• 1/2 cup granulated sugar
• 2 eggs, slightly beaten
• 3/4 cup canned pumpkin
• 1/3 cup canola oil
• 1/2 cup finely shredded carrot
• 1/3 cup chopped walnuts
What To Do:
1. Preheat oven to 350 degrees F. Coat an 8-inch square baking dish with cooking spray.
2. In a large bowl, combine flour, baking powder, baking soda, allspice, and salt. Set aside.
3. In a medium bowl, combine sugar and egg. Stir in pumpkin and oil, mixing until well blended. Stir in carrot and nuts. Add pumpkin mixture all at once to flour mixture, stirring until combined. Spoon batter into prepared baking dish, spreading evenly.
4. Bake 25 to 30 minutes, or until a toothpick inserted in center comes out clean. Cool in pan on wire rack. Cut into bars.
