Brian Means at Fifth Floor in San Francisco, California created this interesting hot chocolate recipe that blows your average cocoa away. It will serve four, so is a nice addition to a winter fireside chat, maybe after a day on the slopes.
As you can see, this is a real hot chocolate recipe that is made from scratch using not one, but three chocolate sources. Don't let that scare you, though, it really is quite easy. It is a simple matter of using the heated ingredients to melt the chocolate, adding the liqueurs, then warming it all up one last time.
Beyond the creamy chocolate of this drink, the two liqueurs will give the cocoa some depth. The creme de menthe is standard, but it is the Fernet Branca that gives the drink a truly unique flavor, more of a punctuated mint with herbal tones. Typically a strong flavor, when Fernet is paired with these sweet layers of chocolate it becomes more tame and its signature menthol makes for a really nice background.
Ingredients:
• 8 ounces milk
• 1 ounce heavy cream
• 1 ounce sugar
• 1/2 teaspoon salt
• 1-1/2 ounces 64% dark chocolate
• 1-1/2 ounces 35% milk chocolate
• 1/4 ounce cocoa powder
• 3 ounces Fernet Branca
• 1 ounce creme de menthe
• Whipped cream and marshmallow for garnish
Preparation:
1. Heat the cream, milk, sugar and salt.
2. Pour over the chocolates and cocoa powder.
3. Whisk all together to combine.
4. Add the Fernet Branca and creme de menthe.
5. Pop in the microwave to warm or steam with espresso machine.
6. Top with marshmallow and whipped cream.
