    Baked Blueberry French Toast

    This baked blueberry French toast uses whole grain bread, fat-and cholesterol-free egg substitute and nonfat milk. Prepared the night before, all you need do is pop it in the oven in the morning.

    Ingredients:
    • 1 pound whole grain artisan loaf
    • 2-1/2 cups nonfat milk
    • 2 cups liquid egg substitute
    • 2 tsp vanilla extract
    • 3 tbsp sugar
    • 3/4 tsp ground cinnamon
    • 2 cups fresh blueberries

    Preparation:
    Slice bread into ¾-inch slices, then cut in half. Arrange overlapping sliced halves in the bottom of a 9-inch by 13-inch baking pan coated with nonstick cooking spray.

    Whisk milk, egg substitute, vanilla, sugar and cinnamon in a medium bowl.

    Sprinkle blueberries over bread, then pour liquid over, pressing down with the back of a large spoon to ensure the bread pieces are soaked.

    Cover with foil and refrigerate for 8 hours or overnight.

    When ready to bake, preheat oven to 350 degrees. Bake covered for 40 minutes; uncover and bake 15-20 minutes, until golden.
