GR: Marinated Broiled Lamb Chops

Makes 4 servings
1 tablespoon chopped fresh rosemary
1/2 teaspoon freshly ground pepper
1/4 teaspoon salt
2 cloves garlic, crushed
4 (5-ounce) lean lamb loin chops
Vegetable cooking spray
Fresh rosemary sprigs (optional)
Preparation:
Mash rosemary, pepper, salt, and garlic to a paste.
Trim fat from chops. Rub garlic mixture over both sides of chops; cover and chill 30 minutes.
Place chops on rack of a broiler pan coated with cooking spray. Broil 5 1/2 inches from heat (with electric oven door partially opened) 5 to 6 minutes on each side or to desired degree of doneness. Garnish with fresh rosemary sprigs, if desired.
