Almond Butter Ball Cookies

6 Tbsp sugar
2-1/2 Tbsp almond butter
2 Tbsp unsalted butter, softened
1 egg white
1/2 tsp vanilla extract
14 Tbsp all purpose flour
1/2 tsp baking soda
vegetable oil spray
Preheat oven to 375°F. Combine sugar, almond butter, and butter in a mixing bowl. Beat with an electric mixer until light and fluffy. Add egg white and vanilla and mix thoroughly.
Combine remaining ingredients, except vegetable spray, in a bowl. Slowly stir into almond butter mixture.
Freeze 20 minutes. Form dough into 2 in. balls. Arrange 2 in. apart on cookie sheets sprayed with vegetable oil. Bake about 12 minutes, or until golden. Cool cookies on a wire rack.
