Cranberry Orange Biscotti

"While cranberry orange biscotti make an ideal gift from your kitchen during the holiday season, there's no reason why you can't enjoy them all year round. Perfect for dipping in your coffee or cocoa, these crunchy, twice-baked cookies make a nice low fat sweet treat. If you don't like your biscotti too crunchy, then you can always bake them just the once."
2 cups all-purpose flour
1/4 tsp salt
1 tsp baking powder
3/4 cup sugar
1 egg
2 egg whites
2 tbsp canola oil
1 tsp vanilla extract
1/2 cup dried chopped cranberries
Zest of 1 large orange
Preheat oven to 350 degrees.
Combine flour, salt and baking powder in a medium bowl. In a large bowl, beat sugar, egg and egg whites, oil and vanilla together.
Add flour mixture to sugar and egg mixture and stir well. Mix in dried cranberries and orange zest. Don’t worry if the dough seems slightly dry.
Turn out dough on to a floured surface, divide in half and form into two 8-10 inch logs. Bake on a large cookie sheet lined with parchment for 20 minutes, until firm.
Remove from oven and allow to cool for 10-15 minutes. Meanwhile, reduce oven heat to 300 degrees.
Once slightly cooled, and using a serrated knife, cut logs on the diagonal into ½-inch slices. Lay slices cut side down on cookie sheet. Return to oven and bake for 10 minutes each side. Remove from the oven and cool on a wire rack.
