    Hot Artichoke Dip

    One of my favorite dips is this hot artichoke dip, which is an easy one to modify to reduce fat content. I simply use low fat plain yogurt and fat-free mayonnaise, and just a half cup of parmesan.

    Ingredients:
    • 1/2 cup plain low fat yogurt, drained
    • 1/4 cup fat-free mayonnaise
    • 1/2 cup shredded parmesan cheese
    • 1/4 cup finely chopped onion
    • 1 14-ounce can artichoke hearts, drained and chopped
    • Black pepper to taste

    Preparation:
    Preheat oven to 350 degrees.
    Combine yogurt, mayonnaise and cheese in a small bowl. Add onion and artichoke hearts. Transfer to a small casserole dish. Bake for 20 minutes.

    Serve hot, warm or cold with whole grain pita triangles, cut veggies or baked tortilla chips.
