    Foil Pack Oriental Chicken Dinner

    Ingredients:
    1-1/2 cups instant white rice, uncooked
    1-1/2 cups warm water
    1/4 cup KRAFT Chicken & Rib BarBQ Sauce
    2 Tbsp. KRAFT Peanut Butter
    1 tsp. soy sauce
    4 small boneless skinless chicken breasts (1 lb./500 g), about 1/2 inch thick
    3 cups frozen oriental mixed vegetables

    Directions:
    1 PREHEAT oven to 400°F. Mix rice and water in small bowl; set aside. Mix barbecue sauce, peanut butter and soy sauce in another bowl; set aside. Spoon rice evenly onto center of each of four large sheets of heavy-duty foil. Top each with 1 chicken breast. Cover evenly with vegetables and barbecue sauce mixture.

    2 BRING up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside. Place packets in single layer in 15x10x3/4-inch baking pan.

    3 BAKE 30 to 35 min. or until chicken is cooked through (170ºF). Remove packets from oven; let stand 5 min. Place one packet on each of four dinner plates. Cut slits in foil with sharp knife to release steam before opening.

    Make Ahead
    Foil packets can be prepared in the morning and refrigerated so when you get home you can just pop them in the oven for dinner!

    If the chicken breasts in your market are larger than 4 oz., they will take longer to cook. Be sure to cook them long enough so that they are no longer pink in the centers and the juices run clear (170ºF).
