    Diabetic Spanish Fish

    Healthy and Hearty Diabetic Cooking Second Edition
    4 servings

    1 med. onion, chopped
    1 green pepper, chopped
    1 tbsp. vegetable oil

    1/2 cup white wine
    1 can (15 oz.) no-salt-added tomato sauce
    1 can (15 oz.) chopped tomatoes
    1 bay leaf
    1/2 tsp. garlic powder
    1/4 tsp. oregano
    1/2 tsp. hot pepper (or Tabasco) sauce

    1 lb. fresh fish fillets, divided into 4 equal portions

    Saute onion and green pepper in oil for 2 min. in a large nonstick skillet. Add next 7 ingredients. Simmer for 10 min. stirring frequently.

    Add fish to sauce. Cover and simmer 20 min. longer, or until fish flakes easily with a fork. Remove bay leaf. Serve immediately.
