Golden Spiced Fruit

Makes 8 servings.
1/2 cup golden raisins
1/2 cup Riesling or other slightly sweet white wine
1/3 cup sugar
1 1/2 teaspoons grated peeled fresh ginger
1 (1-inch) julienne-cut lemon rind
1 (3-inch) cinnamon stick
1 1/2 cups (1-inch) cubed fresh pineapple
1 1/2 cups chopped peeled Golden Delicious apple (about 2 apples)
2 teaspoons cornstarch
2 teaspoons water
Combine first 6 ingredients in a large saucepan over medium-high heat; add pineapple and apple. Bring to a boil; reduce heat, and simmer 10 minutes or until apples are soft. Remove from heat. Cover, and let stand 15 minutes.
Remove lemon rind and cinnamon stick. Return fruit mixture to a simmer. Combine cornstarch and water; stir into fruit mixture. Cook until slightly thick (about 4 minutes).
