Makes about 30 meatballs (6 generous servings)
Total Time: 43 minutes
We love meatballs, and can happily eat them every week. Sometimes we like a little variety. For instance, we switch out lean ground beef for lean turkey, and spice them up with some Southwestern seasonings, some chopped jalapeno pepper and a generous does of fresh chopped cilantro.
Ingredients:
1 medium onion, finely chopped
1 jalapeno pepper, finely chopped
2/3 cup dry breadcrumbs
2 egg whites
1/3 cup nonfat milk
1/2 cup finely chopped cilantro
3/4 pound lean ground turkey
2 tsp chili powder
2 tsp ground cumin
Preparation:
Preheat oven to 400 degrees.
Combine ingredients in a large mixing bowl with a fork. Form into 1 – 1-1/2-inch balls and place on a large baking sheet lined with parchment or sprayed with nonstick cooking spray.
Bake for 10 minutes, remove from oven and turn meatballs over, and bake for another 10 minutes.
Transfer to a large skillet and simmer for 2-3 minutes in about 5 cups of low-fat marinara sauce.
Serve with whole-grain pasta.
