    Broiled Salmon Soft Tacos w/ Green Onion & Corn Salsa

    This fresh, family-friendly dish is a great way to get your salmon fix without blowing your budget.

    Ingredients:
    Salsa:
    1 can (11 oz) Green Giant™ SteamCrisp® Niblets® corn
    6 green onions, sliced diagonally
    1 tablespoon lime juice

    Tacos :
    8 oz skin-on salmon (1 or 2 filets)
    1 tablespoon vegetable oil
    1/4 teaspoon salt
    1 teaspoon ground cumin
    1 teaspoon ground coriander
    2 cups shredded cabbage
    8 Old El Paso™ flour tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package)
    1/2 cup crumbled feta cheese (2 oz)
    1/4 cup chopped fresh cilantro

    Directions:
    • 1. In medium bowl, toss Salsa ingredients. Set aside.

    • 2. Set oven control to broil. Position oven rack 6 inches from broiling element. Line cookie sheet with foil.

    • 3. Rub top and sides of fish with oil, salt, cumin and coriander. Place fish skin side down on cookie sheet. Broil 7 to 11 minutes (depends on thickness of fillet) or until fish flakes easily with fork. Transfer fish to plate to cool slightly. Remove and discard skin from fish. Flake fish with fork; set aside.

    • 4. Drain salsa through fine-mesh strainer; discard liquid. To assemble tacos, divide cabbage, fish and salsa evenly among tortillas. Top each taco with cheese and cilantro. Serve immediately.


    Expert Tips–
    To warm and soften the tortillas, enclose in a lightly dampened dish towel and microwave on High in 30-second increments until warm, about 1 minute.

    To save time during the dinner rush, prepare all of the ingredients—including cooking the fish—several hours in advance, and assemble just before serving.
