    MA: Apricot-Yogurt Marinade

    Yield: Makes about 1-1/2 cups/360 mL

    This marinade combines sweet apricot flavor with onions and yogurt to make it the perfect marinade for lamb, pork and poultry.

    Ingredients:
    • 1 cup/240 mL plain yogurt
    • 1/2 cup/120 mL finely chopped onion
    • 6 dried apricot halves, roughly chopped
    • 1-2 cloves garlic
    • 2 tablespoons/30 mL fresh parsley leaves
    • 1/2 teaspoon/2.5 mL cinnamon
    • 1/2 teaspoon/2.5 mL ground ginger
    • 1/4 teaspoon/1.25 mL salt
    • 1/4 teaspoon/1.25 mL black pepper

    Preparation:
    Place all ingredients into a food processor and pulse until mixture is well combined, about 10-12 pulses. Remove from processor and use.

    Store marinade in an air tight container in refrigerator for 3-4 days.

    Use on lamb, poultry, pork, and vegetables. Marinate lamb and pork for 8-24 hours, poultry for 2-4 hours, and vegetables for 1-2 hours.
