MA: Jalapeno-Garlic Marinade

This marinade combines the flavor of jalapeno with garlic that adds spice to any cut of meat or vegetable. Don't worry about it being too hot, once seeded, jalapenos lose much of it's heat. However, feel free to adjust the amount of peppers used to suit your tastes.
Ingredients:
• 1 1/2 cups/360 mL water
• 1 cup/240 mL red wine vinegar
• 4 medium jalapenos
• 3 cloves garlic, peeled
• 2 teaspoons/10 mL salt
• 1 teaspoon/5 mL oregano
• 1 teaspoon/5 mL cumin
• 1 teaspoon/5 mL ground red chili
• 1/2 teaspoon/2.5 mL black pepper
Preparation:
Cut jalapenos in half. Remove stem and seeds. Place jalapenos and garlic in a blender. Grind to a pulp. Add remaining ingredients and continue blending.
Allow meats for marinate for about 2 to 4 hours. Marinate fish and vegetables for 30 minutes.
Store marinade in an air tight container in refrigerator for up to 3 days after preparation.
