    MA: Lemon-White Wine Marinade

    Yield: Makes about 1 cup/240 mL

    This crisp and refreshing lemon and white wine marinade works really well on fish or chicken.

    Ingredients:
    • 1/4 cup/60 mL olive oil
    • 1/4 cup/60 mL white wine
    • 2 tablespoons/30 mL fresh lemon juice
    • 2 tablespoons/30 mL brown sugar
    • 1 tablespoon/15 mL fresh thyme
    • 1 tablespoon/15 mL fresh rosemary
    • 1-2 cloves garlic, minced
    • 2 teaspoons/10 mL lemon rind
    • 1 teaspoon/5 mL sea salt

    Preparation:
    Combine all ingredients until mixed well. Use right away or place in airtight container and store in refrigerator for up to 1 week.

    Marinate chicken pieces for 1-2 hours, pork for 4 hours, and seafood for 15-20 minutes at most.
