MA: Red Wine Chicken Marinade

This red wine marinade is good on anything from chicken breast to chicken thighs. You can also use it as a basting sauce for rotisserie chicken or even on grilled turkey breasts.
Ingredients:
• 2 cups/475 mL dry red wine
• 1/2 cup/120 mL olive oil
• 1/4 cup/60 mL low-sodium soy sauce
• 4 scallions, sliced
• 1-2 cloves garlic, minced
• 2 tablespoons/30 mL brown sugar
• 1 tablespoon/15 mL Worcestershire sauce
• 1 teaspoon/5 mL fresh ginger, grated
Preparation:
Combine all ingredients in a medium saucepan. Let boil for 1 minute, reduce heat and simmer for additional 8-10 minutes. Remove from and let cool completely before using.
If making ahead of time, marinade may be stored in the refrigerator for no more than one week. Marinade chicken in mixture for 4-12 hours.
