    MA: Satay Marinade***

    Yield: Makes about 2-1/4 cups

    Satay is one of the most popular ways to grill meats. These kebabs are made with thin strips of meat and the marinade adds a wonderful combination of flavors to them.

    Ingredients:
    1/2 cup/120 mL low-sodium soy sauce
    • 1/2 cup/120 mL rice wine vinegar
    • 1/2 cup/120 mL chunky style peanut butter
    • 1/3 cup/80 mL chopped fresh cilantro
    • juice from 1 lemon (about 1/4 cup)
    • 2 tablespoons/30 mL honey
    • 1 tablespoon/15 mL sesame oil
    • 1 tablespoon/15 mL fresh grated ginger
    • 2 cloves minced garlic
    • 1/2 teaspoon/2.5 mL cayenne (optional)

    Preparation:
    Combine all ingredients until well mixed through. Marinade can be stored for a short time in an airtight container in the refrigerator, about 3 days. Works well on all meats, seafood, and fish.

    Marinade time is about 1 hour for pieces cut into 1 inch cubes.
