    MA: Southwest Tequila Marinade

    Yield: Makes about 1-1/4 cup

    This southwestern marinade combines tequila, lime, and cilantro to give it a great, authentic flavor. This marinade works on everything, but is perfect for pork and poultry.

    Ingredients:
    • 1/3 cup/80 mL lime juice
    • 1/3 cup/80 mL olive oil
    • 1 small jalapeno pepper, finely chopped
    • 2 tablespoons/30 mL tequila
    • 2 tablespoons/30 mL fresh cilantro, chopped
    • 2 cloves garlic, minced
    • 2 teaspoons/10 mL ground cumin
    • 1 teaspoon/5 mL salt
    • 1/2 teaspoon/2.5 mL black pepper

    Preparation:
    Combine all ingredients and mix well. Store, refrigerated in an airtight container.

    Marinate seafood for about 15-20 minutes, poultry for about 2 hours and other meats for up to 4 hours.

    Store marinade in refrigerator in an air tight plastic container or glass jar for up to 1 week after preparation.
