MA: Tequila Marinade

Yield: Makes about 2/3 cup/160 mL
This is a great marinade for beef, though it works well with everything else. It adds a great southwestern flavor and is a good marinade for fajitas.
Ingredients:
• 1/2 cup/120 mL tequila
• 2 tablespoons/30 mL olive oil
• 1 tablespoon/15 mL pepper
• 2 teaspoon/10 mL grated lemon peel
• 2 cloves garlic minced
• 1 teaspoon/5 mL salt
Preparation:
Combine all ingredients and mix until the salt dissolves. Marinate beef or pork for about hours. Marinate poultry for about 1 hour.
