    Tropical Gelatin Salad

    This recipe is proof that diabetic desserts don't have to be boring. Our Tropical Gelatin Salad is bright, beautiful, and will make you feel like you're on a deserted tropical island. The only thing missing is the ocean breeze!

    What You'll Need:
    • 1 (4-serving size) package lime-flavored gelatin
    • 2 cups boiling water, divided
    • 1 (12 ounce) can lemon-lime soda, divided
    • 1/2 cup finely shredded cabbage
    • 1 (4-serving size) package lemon-flavored gelatin
    • 1 (8 ounce) can crushed pineapple, undrained
    • 1/3 cup low-fat vanilla yogurt

    What To Do:
    1. In a medium-sized bowl, combine lime gelatin and 1 cup boiling water; stir to dissolve gelatin. Add half of lemon-lime soda; mix well. Add cabbage and mix again. Pour mixture into a gelatin mold or a 10-inch Bundt pan and chill 1 hour, or until set.

    2. In a medium-sized bowl, combine lemon gelatin and remaining 1 cup boiling water; stir to dissolve gelatin. Add remaining 1/2 can soda, pineapple (juice and all), and yogurt; whisk until smooth. Pour over set lime gelatin mixture, cover, and chill at least 2 hours, or until set.

    3. When ready to serve, immerse bottom of mold in warm water for a few seconds, then invert onto a flat serving plate larger than mold and release mold.

    Notes
    No mold? No problem! Just make it in a large serving bowl and serve it right out of the bowl or unmold it from the bowl, following the directions above.
