It's actually been around so long, that it's believed to be one of the earliest plantings in North America. So bring a little bit of history to your dinner table with our Cilantro Shrimp Salad!
What You'll Need:
• 1/2 pound cooked large salad shrimp, peeled and deveined
• 1 (15-ounce) can black beans, drained and rinsed
• 1 cucumber, chopped
• 1 cup frozen corn, thawed
• 1/2 red bell pepper, chopped
• 1/3 cup chopped fresh cilantro
• 1/2 cup canola oil
• 1 tablespoon fresh lime juice
• 1 tablespoon white vinegar
• 1 teaspoon sugar
• 1/2 teaspoon crushed red pepper*
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
What To Do:
1. In a large bowl, combine the shrimp, black beans, cucumber, corn, bell pepper, and cilantro; mix well, and set aside.
2. In a medium bowl, combine the remaining ingredients; mix well, and pour over the shrimp mixture, tossing until well coated. Cover and chill for at least 1 hour before serving.
Notes:
*To make this a gluten-free recipe, use seasonings with no added starch from a gluten-containing source.
