Tuna and Pasta Salad

Serves 4; serving size: 1/4 Recipe
8 oz whole-wheat bowtie pasta
2 cups cut green beans (or 1 lb frozen)
1 cup sliced carrots
1/2 cup red wine vinaigrette dressing
1 can (12 ounces) canned tuna, packed in water
1-1/2 medium tomatoes, cut into thin wedges
3/4 medium red onions, thinly sliced
4 large black olives, pitted and sliced
3 Tbsp chives
Pepper, to taste
Fill a 5-quart saucepan two-thirds full with water; bring to a boil. Add pasta and cook according to package directions. Reduce heat to low; simmer, uncovered, for 8 minutes. Add green beans and carrots; simmer uncovered for 4 minutes, until pasta is tender and vegetables are crisp-tender. Drain well.
Return pasta and vegetables to saucepan and add vinaigrette; toss well to coat. Break tuna into large pieces. Add tuna, tomato, onion, olives, chives, and pepper; toss gently but thoroughly to mix.
