    Here's a salad that's full of fresh taste and bright color! Our recipe for Asparagus and Tomato Salad is full of nutrition, too! Serve this flavor-filled, low-carb salad anytime of the year and your whole family will cheer!

    What You'll Need:
    • 2 (10-ounce) packages frozen asparagus spears, thawed and cut in half (see Note)
    • 4 large plum tomatoes, cut into 1-inch chunks (1 pound)
    • 1/2 medium red onion, cut into strips
    • 2 tablespoons extra virgin olive oil
    • 1 tablespoon balsamic vinegar
    • 1/4 cup chopped fresh basil
    • 1/2 teaspoon salt

    What To Do:
    1. In a large bowl, combine the asparagus, tomatoes, and onion; toss gently.

    2. In a small bowl, whisk together the remaining ingredients. Pour over the asparagus mixture and toss until coated.

    3. Cover and chill for at least 1 hour before serving.


    Notes:
    • If you'd prefer to use fresh asparagus, simply blanch them in a large pot of boiling water for 2 minutes then cool and cut.
