Tahini replaces mayonnaise for a creamy texture and adds a tangy flavor, plus some fiber, protein, and calcium.
Ingredients:
1 tablespoon plus 1 teaspoon tahini*
2 tablespoon orange juice
3 tablespoons balsamic vinegar
2 cloves garlic, smashed and chopped
1 teaspoon low-sodium soy sauce
1 tablespoon warm water
1 clementine, peeled and segmented (optional)
1 bag (12 ounces) cabbage or broccoli slaw (we used a red cabbage slaw)
* Tahini is sesame paste. You can find it in the Asian food aisle, or you could substitute natural peanut butter.
Directions:
Whisk together the tahini, orange juice, vinegar, garlic, soy sauce and water in a large bowl.
Add the slaw to the sauce. Stir to combine. Top with the clementine segments, if desired.
Cover and chill for one hour before serving.
