There may only be five ingredients in our Tomato and Artichoke Salad, but it's not short on taste! Between the robust balsamic dressing and the tangy blue cheese, it's a winning combination!
What You'll Need:
• 6 plum tomatoes, cut into 1-inch chunks (about 1-1/2 pounds)
• 1 (14-ounce) can artichoke hearts, drained and quartered
• 1/2 sweet onion, cut into 1-inch chunks
• 1/3 cup light balsamic dressing*
• 1/4 cup crumbled real blue cheese
What To Do:
1. In a large bowl, toss all the ingredients until well combined. Serve immediately, or cover and chill until ready to serve.
Notes
*To make this a gluten-free recipe, use dressing with no added starch from a gluten-containing source.
