Tuna Antipasto

A typical antipasto is piled with a variety of meats and cheeses, with lots of lettuce. Not this one! It offers a feast of crunchy vegetables and tuna fish for a light, refreshing change.
What You'll Need:
• 1 medium-sized tomato, cut into 1-inch chunks
• 1 medium-sized cucumber, peeled and cut into 1-inch chunks
• 1 small red onion, cut into 1-inch chunks
• 1 small carrot, shredded
• 1/4 cup celery, chopped
• 1/4 cup light Italian dressing
• 1/2 of a medium-sized head iceberg lettuce, coarsely chopped (about 4 cups)
• 1 large can (12 ounces) water-packed chunk light or solid white tuna, drained
What To Do:
1. Combine all the ingredients in a large bowl; toss to mix. Serve immediately.
Notes:
For a more robust flavor, substitute 1/4 cup of my Sun-Dried Tomato Vinaigrette for the Italian dressing.
