    Shrimp Salad Rolls

    Ingredients:
    For the shrimp salad:
    1 pound small or medium shrimp, steamed, peeled and deveined, then coarsely chopped
    1/2 cup non-fat mayonnaise
    1/4 cup finely diced celery
    1/4 cup finely diced, sweet onion
    1 teaspoon lemon zest
    salt and pepper

    For the rolls:
    4 hot dog buns
    4 lettuce leaves, green leaf, bibb or romaine, shredded

    Instructions:
    For the shrimp salad:
    1. In a mixing bowl, combine the shrimp, mayonnaise, celery, onion and lemon zest. Add salt and pepper to taste.


    For the rolls:
    2. Fill each roll with lettuce and 1/4 of the shrimp mixture.

    3. Cut the rolls in half on the diagonal and serve.
