Hungarian Beef Goulash

What You'll Need:
• 1 tablespoon all-purpose flour
• 1 tablespoon paprika
• 1/2 teaspoon dried thyme
• 1/4 teaspoon salt
• 1/2 teaspoon black pepper
• 1 1/2 pound lean top round beef, fat trimmed and cut into 1/2-inch chunks
• 1 tablespoon canola oil
• 1 cup chopped onion
• 3 cloves garlic, minced
• 1 (14-1/2-ounce) can no-salt-added diced tomatoes, undrained
• 2 carrots, peeled and cut into 1/2-inch slices
• 1 (14-1/2-ounce) can reduced sodium, fat-free beef broth
• 1 cup fat-free sour cream
What To Do:
1. In a large bowl, combine flour, paprika, thyme, salt, and pepper; mix well. Add beef chunks, tossing until evenly coated.
2. In a soup pot over high heat, heat oil; add beef, onion, and garlic and cook 5 to 7 minutes, or until browned. Add tomatoes, carrots, and beef broth; bring to a boil. Cover, reduce heat to low, and simmer 1-1/4 to 1-1/2 hours, or until beef is tender.
3. Stir in sour cream, simmer 2 to 3 minutes, then serve.
