    Strawberry-Banana Tofu Smoothie

    Silken tofu gives this smoothie a good dose of vegetarian protein and a thick, creamy texture. If you prefer, substitute ½ cup nonfat yogurt (plain or vanilla) for the tofu.

    Ingredients:
    • 3/4 cup soy milk (may substitute skim, almond, or rice milk)
    • 1/2 cup silken tofu (quarter of a 16-ounce block)
    • 1/2 medium banana (preferably frozen), sliced into rounds
    • 1/2 cup frozen strawberries
    • 3 to 5 ice cubes

    Preparation:
    Combine all ingredients in a blender, and blend until smooth and frothy.

    One (2-cup) serving equals: Calories: 220; Protein: 11.0g; Total Fat: 6.0g (Saturated Fat: 0.0g); Cholesterol: 0mg; Total Carbohydrate: 31.0g; Fiber: 4.0g; Sodium: 90mg
