Mama always said to eat your veggies, but she probably didn't know we could make them so crave-worthy. A sprinkle of low fat Mozzarella cheese and a shot of Italian dressing takes this Summery Vegetable Saute to a whole new level!
What You'll Need:
• 2 zucchini, sliced
• 1/2 onion, sliced
• 2 tablespoons fat-free Italian dressing
• 3 tomatoes, coarsely chopped
• 1 teaspoon garlic powder
• 1 tablespoon fresh basil, sliced
• 1 tablespoon chopped fresh parsley
• 3/4 cup shredded reduced-fat mozzarella cheese
What To Do:
1. Coat a large skillet with cooking spray. Saute zucchini and onion until just tender, about 5 minutes.
2. Stir in Italian dressing. Add tomatoes, garlic, basil, and parsley; mix gently to combine.
3. Sprinkle mozzarella cheese evenly over top. Continue cooking until cheese is melted, about 1 to 2 minutes, stirring occasionally. Serve immediately.
