    I originally found this recipe on the internet and doubled it because one pie just wasn't enough.

    List of Ingredients




    3 1/2 c sugar
    1/2 c dark brown corn syrup
    1/2 c butter
    2 tbsp cold water
    4 tsp cornstarch
    6 eggs
    1/2 tsp salt
    2 tsp vanilla
    2 1/2 c chopped pecans
    2 9" pie shells

    Recipe



    Preheat oven to 375 degrees.
    In large saucepan, combine sugar, corn syrup, butter, water, and cornstarch. Bring just to a boil, stirring constantly, and remove from heat.
    Beat eggs until frothy and slowly stir in sugar mixture. Stir in salt, vanilla and pecans and pour into pie shells.
    Bake at 375 degrees for 45 to 50 minutes, or until filling is set and crust edges are browned.
    Allow to cool for at least an hour before cutting.
