Recipe
Sprinkle both sides of your chops with meat tenderizer, cracked pepper, sage, and I used some RedRobin seasoning (garlic salt, pepper, paprika pretty much).
Then mince up 2 or 3 cloves garlic and just sort of rub it on top and bottom of the chops.
Wrap each chop in 2 pieces of bacon. No need to secure with a toothpick or anything.
Place them in a foil lined (or not) baking pan. At this point I put them in the fridge for a few hours because I wasn't ready to cook them. But I think it helped the flavors soak in.
When ready to bake, put in a heated 375 oven and pour about 1/3 can beer over the top. After 20 minutes add a splash more beer. The pork should be done after 30 mins or so, but cut in just to make sure.
To crisp the bacon at the end, put the pan under the broiler and flip chops once so both sides get crisped.
