    olive oil
    1/2 pound fresh spinach
    1 onion, diced
    3 garlic cloves, minced
    8 oz cream cheese
    1 tsp nutmeg
    1 round steak - make sure it's in one piece
    1/2 green pepper, seeded and diced
    1 cup white wine
    1 1/2 cups beef broth

    Recipe



    Heat a bit of olive oil over medium heat. Add in half of onion, garlic, and spinach. Cook until the spinach is decreased in size and onions are translucent. Remove from heat and add in cream cheese. Mix until melted. Sprinkle in nutmeg and stir.

    Preheat oven to 375. Flatten meat to 1/4 inch with meat mallet or rolling pin. Spread spinach mixture on meat and roll up. Secure with string or toothpicks.

    In large frying pan, brown meat, seam side up. Place in large roaster, surround with remaining onion and green pepper. Pour in liquids.

    Bake for 25 minutes or until meat is desired doneness. Remove string/toothpicks. Slice like a jellyroll. Use cornstarch to thicken liquids, if desired.

    Goes great with steamed parsley potatoes.
