List of Ingredients
1 green bell pepper
two small onions (yellow or white)
as much garlic as the diners can take
bulk hot Italian sausage (though sliced hot links work ok)
small can of chick peas
olive oil
red pepper flakes
oregano
basil
fennel seeds
parsley
salt pepper
Recipe
1. Put olive oil in large frying pan, at least enough to cover the bottom. Turn heat to medium and add red pepper flakes.
2. As it gets hot, add green pepper cut into strips. If there's not enough oil to get them well-coated, add more.
3. Let those go a bit and toss around in the hot oil while breaking up sausage into small bites and dropping them into the pan.
4. Get strips of onion in there. Start adding spices in quantity - heat and spice level is really dependent on who will be eating it.
5. Add as much garlic as possible - the cloves should be in small slices, not minced.
6. Make sure everything is quite well-coated in oil, and let it go until the sausage looks done, the peppers are soft and the onions are golden. Toss chick peas in and let them get heated through. Eat with crusty bread and either cheap beer or cheap wine.
7. To dress it up, add a very small can of tomato paste and mushrooms right after the chick peas - though this can be waaay too rich!
