    tortellini with leeks and cream

    List of Ingredients




    1 package cheese tortellini
    2 tbsp butter
    2 large leeks
    1 pint heavy cream
    salt and pepper
    shredded parmesan, to taste

    Recipe



    Bring large pot of water to a boil.

    Meanwhile, cut ends and dark green leaves off of leeks. Slice lengthwise and separate. Clean between each layer to get any hidden dirt out. Slice into small pieces. This should yield around 2 1/2 cups.

    Melt butter over medium heat and add leeks. Cook until tender. Add cream, salt, and pepper. Bring to a boil, then reduce to very low heat.

    Cook pasta according to package directions, drain, and return to pot. Pour sauce over pasta, stir, and sprinkle with cheese.
