    Stuffed chicken breasts

    2 boneless skinless chicken breasts, flattened with a meat mallot or rolling pin
    salt and pepper
    Olive oil
    1/2 onion, diced
    1/4 green pepper, diced
    2 tsp minced garlic, divided
    handful of raw spinach
    1/4 c shredded mozarella
    1/2 c chicken stock
    1/2 c milk (I used almond milk but I don't think it matters)

    Recipe




    Preheat oven to 350 degrees. Meanwhile, in small skillet, heat olive oil over medium heat. Add green peppers and onion, cooking until translucent. Add garlic and cook about a minute, then add spinach and allow to wilt. Add half of spinach mixture to the top of each chicken breast and spread out. Sprinkle half of cheese over each chicken breast, and roll up like a taco. Secure with toothpicks.

    Add more oil to skillet and brown one side of chicken, seam side up. Then place in a baking dish that has a lid.

    In the skillet, warm garlic in chicken drippings and add in wine. Allow to reduce and then add milk. Pour over chicken, cover dish, and bake for 20 minutes. Remove lid and cook 10 more minutes. Serve.
