Recipe Introduction
This recipe was originally intended to be stored in jars but works just as well in the freezer.
List of Ingredients
8 medium cucumbers
6 medium onions, sliced
3 cloves garlic, sliced
1/3 c non-iodized salt
Crushed ice
5 c sugar
3 c cider vinegar
2 tbsp mustard seeds
1 1/2 tsp ground turmeric
1 1/2 tsp celery seedsRecipe
Wash cucumbers. Slice thinly.
Combine cucumbers, onion, garlic, and salt in a large dutch oven or the basin of a crockpot. Combine with crushed ice; mix thoroughly, and let stand 3 hours, covered. Drain.
Combine remaining ingredients; pour over cucumber mixture. Heat thoroughly, just until boiling.
If you're going to freeze the pickles, place in freezer containers and freeze.
If you're going to can in jars, pack while boiling into hot, sterile jars, leaving 1/2 inch headspace. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on metal bands. Process jars in boiling water bath for 10 minutes.
Yields about 8 pints.
