This recipe is weight watchers friendly and is between 3-8 points, depending on what add-ins you use, if any.
List of Ingredients
* 1/4 cup refried or pinto beans
* 1 cup of romaine lettuce
* 1 baby roma tomato, chopped (1/4 cup)
* 1/4 medium red pepper (1/4 cup)
* 1 scallion, chopped
* 1/4 cup salsa
* 2 Tb fat-free ranch Dressing
* Fresh cilantro, to taste
Optional Ingredients:
* 6 Baked Doritos (14 g), crushed (Adds 1.3 healthy units to the salad)
* 1/8 cup reduced-fat shredded Mexican Cheese (Adds 1 healthy unit to the salad)
* 1/4 medium avocado (Adds 2.2 healthy units to the salad)Recipe
Heat beans in microwave for 1 minute. Transfer to salad plate. Arrange lettuce, tomatoes, pepper, scallion,salsa, and avocado over the beans. Drizzle fat-free ranch dressing over the salad and top with shredded cheese, crushed Doritos, and fresh cilantro.
