French Onion Soup

Recipe Introduction
My mom made a comment a couple of weeks ago about how she made French Onion Soup by using the mix and adding some onions. I knew I could do better from scratch and that's what I did. I had a hard time finding a recipe without alcohol or a broiler involved so I adapted the ones I found into something I could use.
List of Ingredients
- 1 tbsp olive oil
- 3 garlic cloves, minced
- 3 onions, chopped
- 1 tsp dried chives
- 4 c beef broth or stock
- 1 c water
- croutons
- grated parmesan cheese
Instructions
- Heat oil in stock pot over medium heat.
- Add garlic, onion, and chives, and cook until onion is translucent, stirring often.
- Add broth and water.
- Simmer 15 minutes, uncovered.
- Add 5 or 6 croutons to the bottom of a coffee mug or small bowl.
- Pour soup over croutons and sprinkle on cheese.
Final Comments
Serve with a salad and maybe some rolls and you have a whole meal for mere pennies.
