    Recipe Introduction


    My mom made a comment a couple of weeks ago about how she made French Onion Soup by using the mix and adding some onions. I knew I could do better from scratch and that's what I did. I had a hard time finding a recipe without alcohol or a broiler involved so I adapted the ones I found into something I could use.


    List of Ingredients


    • 1 tbsp olive oil
    • 3 garlic cloves, minced
    • 3 onions, chopped
    • 1 tsp dried chives
    • 4 c beef broth or stock
    • 1 c water
    • croutons
    • grated parmesan cheese


    Instructions


    1. Heat oil in stock pot over medium heat.
    2. Add garlic, onion, and chives, and cook until onion is translucent, stirring often.
    3. Add broth and water.
    4. Simmer 15 minutes, uncovered.
    5. Add 5 or 6 croutons to the bottom of a coffee mug or small bowl.
    6. Pour soup over croutons and sprinkle on cheese.


    Final Comments


    Serve with a salad and maybe some rolls and you have a whole meal for mere pennies.
