    Meatball Stew

    Source of Recipe

Rival Crock Pot Slow Cooker Favorites cookbook pg 16

    Recipe Introduction

I love anything different for the crockpot and this one is not only yummy but has the potential to be low-fat, depending on the meat you use. I cook my meatballs in the George Foreman grill instead of browning them with oil but that's up to you.

    List of Ingredients

    • 3 lbs ground beef or ground turkey, thawed
    • 1 cup italian bread crumbs
    • 4 eggs
    • 1/2 c milk
    • 1/4 c grated romano cheese
    • 2 tsp salt
    • 2 tsp garlic
    • 2 tsp black pepper
    • 2 tbsp olive oil
    • 2 c water
    • 2 c beef broth
    • 1 can (14 1/2 ounces) stewed tomatoes, undrained
    • 1 (12 ounce) can tomato paste
    • 1 c chopped carrots
    • 1 c chopped onion
    • 1/4 c chopped celery
    • 1 lbsp italian seasoning

    Instructions

    1. Combine meat, bread crumbs, eggs, milk, cheese, salt, garlic, and pepper in large bowl.
    2. Form into 2-inch round balls.
    3. Heat oil in skillet over medium high heat until hot.
    4. Brown meatballs on all sides.
    5. Transfer to 5 or 6 qt slow cooker.
    6. Add remaining ingredients.
    7. Stir well to combine.
    8. Cover; cook on low 4-6 hours or on high 2-4 hours.
