    Vegetarian pasta lasagna

    1 box pasta, such as mostaccioli
    3 tbsp olive oil
    1 medium onion, diced
    1 tbsp minced garlic
    1 medium zucchini, quartered and sliced thinly
    generous handful fresh spinach
    15 oz tub ricotta cheese
    2 cups shredded mozzarella cheese, divided
    1 jar pasta sauce
    dried oregano (optional)

    Cook pasta according to package directions.

    Meanwhile, heat oil in large skillet. Add onion and garlic. Cook until onion is translucent. Add zucchini and spinach and cook until spinach wilts. Add ricotta cheese, 1 cup mozzarella, and half of pasta sauce. Stir well.

    Drizzle a quarter of the remaining pasta sauce into the bottom of a 13x9" pan and spread with the back of a spoon. Add a third of the pasta. It's okay if it doesn't completely cover the pan. Add half of the cheese mixture and spread gently. Cover with another third of the pasta. Add the other half of the cheese mixture, then the remaining pasta. Drizzle remaining sauce over pasta.

    Cover and bake at 350 degrees for 40 minutes. Uncover, sprinkle remaining cheese and oregano to taste (optional) on top. Bake for an additional 5 minutes or until cheese is melted.
