Chocolate Fudge

List of Ingredients
- 4 cups sugar
- 3/4 cup cocoa/scant 3/4's
- 4 Tablespoons white Karo
- 2 cups milk
- 1 stick butter or oleo
- pinch salt
- 1 teaspoon vanilla
- 6 large marshmellows
- 1 1/2 cups chopped nuts
Instructions
- Butter lightly a sided cookie sheet.
- Butter lightly sides of heavy 3-4 qt. sauce pan. Combine sugar, cocoa, Karo syrup, milk and pinch of salt in sauce pan. Cook over medium heat without stirring to hard boil stage. Keep at a slow steady boil. Easy to boil over if not watched. Pan will be full and then will boil down to about half of what mixture was when first boiling.
- Set pan in cold water to cool. Add 1 stick of butter, 1 teaspoon vanilla, and 6 large marshmellows.
- Beat with hand mixer. Not long. Add nuts.
- Pour/spoon onto cookie sheet. Let sit until hard.
Final Comments
Good chocolate cake icing. Don't beat too long.
