Jean's Peanut Brittle

Recipe Introduction
Jean gave me two different recipes.
List of Ingredients
- 1 1/2 cups peanuts or pecans
- 1 cup sugar
- 1/2 teaspoon salt (scant)
- 1 heaping teaspoon baking soda
- 1/8 cup water
- 3/8 cup light Caro syrup
- 2 tablespoons oleo or butter
- or
- 2 cups sugar
- pinch salt
- 3/4 cup light Caro syrup
- 1/4 cup water
- 2 1/2 cups pecans
- big table spoon oleo
- 2 teaspoons soda
Instructions
- Boil sugar, salt, syrup, water, and nuts 8 to 10 minutes. Boil and turn down a little above medium. Stir last five minutes constantly.
- Add butter about 2 minutes before taking up.
- Cut off heat.
- Stir in soda.
- Put oleo on formica table or cookie sheet.
- Pour candy onto table. Wait 1 minute and start pulling until very thin.
Final Comments
"Miss Jean" used to make this when we stayed at our camphouse at Thanksgiving.
