    This slightly spicy bread is made in a bread machine on the dough cycle with just a little help in the mixing process, since most bread machines limit the amount of flour to 4 1/2 cups.

    List of Ingredients




    1 1/2 cups lukewarm water
    2 tablespoons fat substitute or applesauce
    1/8 cup egg substitute
    5 to 5 1/2 cups Bread Flour
    3 tsp. sugar
    1 1/2 tsp. salt
    3 tsp. yeast
    2 tsp. taco seasoning

    In bread machine: Add ingredients in order as specified by manufacturer, beginning with 5 cups of flour. Before setting machine to dough cycle, mix ingredients with a wooden spoon until fairly well blended. Then set on dough cycle and allow machine to mix for about 5 minutes. Check dough and gradually add more flour and mix in with your hands until dough is no longer very sticky but do not allow it to become too dry. Allow machine to finish complete dough cycle. At end of cycle, remove from machine and let rest for 10 minutes on lightly floured board. Form into long (about 10 inches) loaf and set on lightly greased (I use cooking spray) baking sheet. Either lightly oil top or mist with cooking spray. Cover with towel and set in warm place or over bowl of warm water. Allow to rise until doubled, between 40 to 50 minutes. Bake in preheated 375 degree oven 30 to 40 minutes or until top is golden brown and bottom sounds hollow when tapped with wooden spoon. Remove from pan and allow to cool or slice it warm - it's delicious. For a soft crust, lightly spray the surface with butter flavored cooking spray and cover with a dry, clean towel while cooling. You can also sprinkle the top with a little taco seasoning before baking to add a little bit more spice.
