    Carrot Pumpkin Muffins

    I'm not sure who I got this recipe from, but they sure are good!


    List of Ingredients


    • 1 cup canned pumpkin
    • 2 eggs
    • 2/3 cup instant non-fat dry milk
    • 2 teas. pumpkin pie spice
    • 8 teas. sugar
    • 1 cup grated carrots
    • 6 Tbls. flour
    • 1/4 cup raisins
    • 1 teas. soda
    • 2 teas. baking powder
    • 1 teas. vanilla extract


    Instructions


    1. Combine dry ingredients.
    2. In seperate bowl combine beaten eggs and vanilla.
    3. Add pumpkin and mix well.
    4. Add dry ingredients, carrots and raisins.
    5. Spray muffin pan with Pam; divide dough into 12 muffins as evenly as possible.
    6. Bake at 350 degrees for 15 minutes.


    Final Comments


    Muffins can be frozen.
