Cinnamon-Swirl Muffins

Lighten these up with reduced-fat baking mix and low-fat yogurt. 209 calories and 6 grams of fat.
List of Ingredients
- 2/3 cup low-fat yogurt
- 1/3 cup 1% milk
- 1 egg
- 1egg white
- 2 tbls. canola oil
- 1 teas. vanilla extract
- 2 1/2 cups reduced-fat baking mix, such as Bisquick
- 1/3 cup granulated sugar
- 2 Tb.s ground cinnamon
- 1/2 cup packed brown sugar
Instructions
- Coat 12 muffin cups with cooking spray.
- Wisk together yogurt, milk, egg, egg white, oil and vanilla.
- Stir in 2 cups baking mix and granulated sugar.
- Transfer 1 cup batter to seperate bowl; reserve.
- Divide remaining batter amoung muffin cups.
- Stir cinnamon into reseved batter; dollop over batter in cups.Gently swirl with spoon.
- Stir together brown sugar, butter and remaining baking mix; sprinkle over batter.
- Bake 12 minutes at 400 degrees until toothpick comes out clean.
- Cool 5 minutes and remove from pans. cool on rack.
