    List of Ingredients


    • 2 cups flour
    • 3/4 baking soda
    • 1/2 teas. salt
    • 1 cup sugar
    • 1/4 cup butter, softened
    • 2 large eggs
    • 1 1/2 cup or 3 ripened bananas
    • 1/3 cup plain low-fat yogurt
    • 1 teas. vanilla extract
    • Cooking spray


    Instructions


    1. Preheat oven 350 degrees
    2. Combine dry ingredients, except sugar, and stir with wisk.
    3. Place sugar and butter in a large bowl, beat with mixer until well blended.
    4. Add eggs, 1 at a time, beating well after each.
    5. Add banana, yogurt, and vanilla, beat until blended.
    6. Add flour mixture, beat at low just until moist.
    7. Spoon batter into a loaf bread pan, coated with cooking spray.
    8. Bake for 1 hour or until wooden pick inserted in center comes out clean.
    9. Cool 10 minutes before removing from pan.


    Final Comments


    For varitation: Add 3 Tbls. of rum with vanilla and 1/2 cup coconut.
