Classic Banana Bread

List of Ingredients
- 2 cups flour
- 3/4 baking soda
- 1/2 teas. salt
- 1 cup sugar
- 1/4 cup butter, softened
- 2 large eggs
- 1 1/2 cup or 3 ripened bananas
- 1/3 cup plain low-fat yogurt
- 1 teas. vanilla extract
- Cooking spray
Instructions
- Preheat oven 350 degrees
- Combine dry ingredients, except sugar, and stir with wisk.
- Place sugar and butter in a large bowl, beat with mixer until well blended.
- Add eggs, 1 at a time, beating well after each.
- Add banana, yogurt, and vanilla, beat until blended.
- Add flour mixture, beat at low just until moist.
- Spoon batter into a loaf bread pan, coated with cooking spray.
- Bake for 1 hour or until wooden pick inserted in center comes out clean.
- Cool 10 minutes before removing from pan.
Final Comments
For varitation: Add 3 Tbls. of rum with vanilla and 1/2 cup coconut.
