    Refrigerator Bran Muffins

    List of Ingredients


    • 1 1/2 cups sugar
    • 1/2 cup shortening or 1 stick butter
    • 2 eggs
    • 2 1/2 cups flour
    • 2 1/2 teas. salt
    • 2 cups buttermilk
    • 1 cup boiling water
    • 1 cup 100% bran ready-to-eat cereal
    • 3/4 cup seedless raisins
    • 2 cups All Bran ready-to-eat cereal
    • 1 1/2 teas. salt


    Instructions


    1. Thoroughly cream together sugar and butter.

    2. Add eggs, one at a time, mixing well after each.

    3. Add flour, soda, salt and buttermilk, mix until smooth.

    4. Pour boiling water over 100% bran; let stand until cereal has absorbed water.

    5. Blend bran into batter, add raisins and All Bran.

    6. Regrigerate batter covered for up to 5 weeks. When ready to use, dip batter from container WITHOUT STIRRING into greased muffin tins.

    7. Bake at 400 degrees about 20 minutes.
