Refrigerator Bran Muffins

List of Ingredients
- 1 1/2 cups sugar
- 1/2 cup shortening or 1 stick butter
- 2 eggs
- 2 1/2 cups flour
- 2 1/2 teas. salt
- 2 cups buttermilk
- 1 cup boiling water
- 1 cup 100% bran ready-to-eat cereal
- 3/4 cup seedless raisins
- 2 cups All Bran ready-to-eat cereal
- 1 1/2 teas. salt
Instructions
- Thoroughly cream together sugar and butter.
- Add eggs, one at a time, mixing well after each.
- Add flour, soda, salt and buttermilk, mix until smooth.
- Pour boiling water over 100% bran; let stand until cereal has absorbed water.
- Blend bran into batter, add raisins and All Bran.
- Regrigerate batter covered for up to 5 weeks. When ready to use, dip batter from container WITHOUT STIRRING into greased muffin tins.
- Bake at 400 degrees about 20 minutes.
