Spinach, Feta and Mushroom Quiche

Recipe Introduction
I love Quiche, and this is a good one.
List of Ingredients
- 1 9" pie shell
- 3 Tbl. olive oil
- 8 oz. mushrooms (2 cups cut up)
- 1 large onion (1 cup diced)
- 1/2 teas. salt
- 5 oz. spinach (6 cups packed)
- 3 large eggs
- 1 cup half & half
- Fresh black pepper
- 7 oz. Feta Cheese (1 1/4 cup crumbled)
Instructions
- Pierce crust with fork. Place in freezer for 30 minutes.
- Place baking sheet on lower 3rd of oven and pre-heat to 375 degrees.
- Heat oil in large skillet, add mushrooms onions and salt. Cook until soft 8-10 minutes.
- Add spinach, stir until wilted, aprx. 2-4 minutes.
- Wisk eggs and half & half in small bowl and season with pepper.
- Spoon spinach mix over bottom of pie crust and sprinkle with feta cheese. Pour eggs over top.
- Place on baking sheet and bake until puffed and golden 40-50 minutes.
- Cool on wire rack 10 minutes before cutting.
