    Spinach, Feta and Mushroom Quiche

    Recipe Introduction


    I love Quiche, and this is a good one.


    List of Ingredients


    • 1 9" pie shell
    • 3 Tbl. olive oil
    • 8 oz. mushrooms (2 cups cut up)
    • 1 large onion (1 cup diced)
    • 1/2 teas. salt
    • 5 oz. spinach (6 cups packed)
    • 3 large eggs
    • 1 cup half & half
    • Fresh black pepper
    • 7 oz. Feta Cheese (1 1/4 cup crumbled)


    Instructions


    1. Pierce crust with fork. Place in freezer for 30 minutes.
    2. Place baking sheet on lower 3rd of oven and pre-heat to 375 degrees.
    3. Heat oil in large skillet, add mushrooms onions and salt. Cook until soft 8-10 minutes.
    4. Add spinach, stir until wilted, aprx. 2-4 minutes.
    5. Wisk eggs and half & half in small bowl and season with pepper.
    6. Spoon spinach mix over bottom of pie crust and sprinkle with feta cheese. Pour eggs over top.
    7. Place on baking sheet and bake until puffed and golden 40-50 minutes.
    8. Cool on wire rack 10 minutes before cutting.
