    Vanilla Bean Pancackes

    List of Ingredients


    • 2 cups flour
    • 1 Tbls. sugar
    • 1/2 teas. baking soda
    • 1/4 teas. salt
    • 1 vanilla bean
    • 1 1/2 cups low-fat buttermilk
    • 2 large eggs, lightly beaten
    • Cooking spray


    Instructions


    1. Lightly spoon flour into dry measureing cups; level with knife.
    2. Combine flour, sugar, baking soda, and salt.
    3. Stirring with a wisk, add the vanilla bean.
    4. Store in an airtight container for at least 2 days.
    5. Remove bean, and reserve for another use.
    6. Combine buttermilk and eggs in a large bowl, stirring with a wisk.
    7. Add flour mixture to buttermilk mixture, stirring with a wisk until well combined.
    8. Heat a nonstick griddle, coated with cooking spray over medium heat.
    9. Spoon a scant 1/4 cup batter on griddle.
